Banana Pancakes

How to Make It

In a bowl, mash the banana with a fork until it becomes a puree.

Stir the eggs into the banana and add the baking powder and vanilla extract and combine until it makes a batter.

Heat a frying pan on medium heat and add the olive oil.

Pour half of the batter into the pan and cook for 2 minutes on each side. Do the same with the other half and serve with raspberries and the chopped walnuts.

(Optional) Top with a squeeze of honey, maple syrup or lemon juice

  • 1 banana
  • 2 large eggs, beaten
  • 125 raspberries
  • 20g walnuts, chopped
  • ¼ tsp baking powder
  • 1 tsp olive oil
  • ½ tsp vanilla extract
