Basil and Olive Eggs

How to Make It

    Boil the eggs for 8-10 minutes and then cool in cold water. Peel and halve the eggs and scoop out the yolk. Leave the yolks to the side.

    Put the basil, olives, oil and vinegar in a blender and pulse. You can also use a fork and roughly mash the mix. Place the mix in a bowl and add the yolk, mash until combined.

    Spoon the mix back into the eggs and serve.

Ingredients

  • 2 large eggs
  • ½ small pack of basil
  • 1 tbsp olive oil
  • 4 pitted olives
  • 1 tsp apple cider vinegar
