Burrito Bowl

How to Make It

    Heat the olive oil in a frying pan on a medium heat and pour in the blackpeas, chipotle and season with salt and pepper. Stir and cook for 3-4 minutes.

    Cook the rice in the microwave for 2 minutes, or follow the instructions on the packet.

    Place the spinach in a sieve and pour boiling water from the kettle over it until it wilts.

    Divide the rice between two bowls, then top with the beans, kale and avocado, tomato and onion. Serve with a sauce of your choice.

  • 125g microwave basmati rice
  • 400g tinned black beans, drained and rinsed
  • 1 avocado, stoned, peeled and sliced
  • 1 tomato, chopped
  • 1 red onion, chopped
  • 100g spinach
  • 1 tbsp olive oil
  • 1 tbsp chipotle paste
