Chicken Fried Rice

How to Make It

Heat the oil in a frying pan on a medium heat and cook the chicken for 5 minutes until browned.

Add the pepper, cook for a further 2-3 minutes and season with salt and pepper. Next, stir in the spring onion and cook for a minute.

Whilst the chicken is cooking, microwave the rice for the amount of time given on the packet then tip into the pan and stir.

Push the rice and chicken to one side of the pan and crack the egg on the other side. Cook for 1-2 minutes and then scramble it in with the rest of the ingredients. Coat the mix in the chinese 5 spice.

Finally, pour in the soy sauce and cook for 1 minute, then serve.

  • 150g chicken breast, diced
  • 125g microwave basmati rice
  • 1 egg
  • ½ red pepper, chopped
  • 1 spring onion, chopped
  • 1 tsp chinese 5 spice
  • 2 tbsp light soy sauce
  • 1 tsp olive oil
