Beef, Beetroot and Rocket Salad

How to Make It

Beat the steak with a rolling pin until flat, then cut into two pieces.

In a bowl, combine the vinegar with salt, pepper and half of the oil. Place the steaks in the marinade and set aside.

Heat the rest of the olive oil in a pan on a medium heat. Cook the onions for 8-10 minutes, stirring until soft. Whilst the onions are cooking, bring a saucepan of water to the boil and cook the green beans for 5 minutes.

Push the onions to one side in the pan and place the steaks in the pan. Fry for 2-3 minutes, turning halfway.

Drain the beans and place them on the plates. Add the beef on top and serve with the rocket and beetroot wedges.

  • 240g sirloin beef
  • 2 cooked beetroots, cut into wedges
  • 175g green beans
  • ½ bag rocket
  • 1 tbsp balsamic vinegar
  • 2 red onions, halved
  • 2 tsp olive oil
