Courgette Fritters

How to Make It

    Use paper towels and squeeze the courgettes to remove any excess moisture.

    Next, beat the eggs in a bowl and add the broccoli, courgettes and most of the dill. Add the flour, season with salt and pepper and mix.

    Heat the oil in a frying pan on a medium/high heat and add a large spoon of the mixture in the pan. Do this again twice over so there are 3 fritters.

    Leave to cook for 3-4 minutes until golden, then flip and cook for a further 3-4 minutes.

    Repeat this process to make another 4 fritters, scatter the rest of the dill and serve.

  • 140g courgettes, grated
  • 85g broccoli florets, chopped
  • 3 eggs
  • 1 pack of dill
  • 2 tbsp flour
  • 2 tbsp rapeseed oil
