Curried Cod

How to Make It

Using a frying pan with a lid, heat the olive oil on a medium heat and cook the onions for 4 minutes, stirring occasionally. Add the curry powder and garlic and cook for another minute.

Pour in the tomatoes and chickpeas and season with salt and pepper.

Cook for 8-10 minutes until the mix has thickened. Top with the cod and cover the pan. Cook for 5-10 minutes until the fish is cooked through.

Scatter over the lemon zest and serve with a wedge of lemon.

  • 2 cod fillets
  • 400g tinned chopped tomatoes
  • 200g tinned chickpeas
  • ½ onion, chopped
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp curry powder
  • Zest ½ lemon
