Feta Stuffed Red Peppers

How to Make It

Preheat the oven to 200 degrees celsius. Put the peppers on a plate and microwave for 5 minutes, then place on a baking tray with the cut-side open.

Place the couscous in a bowl and cover with 125ml of boiling water. Stir and cover the bowl, leaving for 10 minutes.

Next, stir the couscous with a fork and mix with the pine nuts, feta and tomatoes.

Scoop the couscous mixture into the peppers and bake for 10 minutes.

  • 2 red peppers, halved and deseeded
  • 85g couscous
  • 50g feta cheese, crumbled
  • 50g cherry tomatoes, quartered
  • 25g pine nuts, toasted
