Tofu Satay Noodles

How to Make It

In a bowl, coat the diced tofu in the soy sauce and leave for a few minutes.

Heat the oil in a pan over a medium heat and cook the tofu for 2 minutes. Next, add the red pepper, sugar snap peas and chilli and cook for a further 5 minutes, stirring occasionally until the tofu is golden.

Add the noodles and spinach and cook for a further 2 minutes

Turn off the heat and stir in the satay sauce, then serve.

Ingredients

  • 175g silken tofu, diced
  • 2 tbsp satay sauce
  • 1 tbsp soy sauce
  • ½ chilli, chopped and deseeded
  • 30g sugar snap peas
  • ½ red pepper, sliced
  • 30g spinach, washed
  • ½ bag soft noodles
  • 1 tbsp vegetable oil
