Tofu Satay Noodles
How to Make It
In a bowl, coat the diced tofu in the soy sauce and leave for a few minutes.
Heat the oil in a pan over a medium heat and cook the tofu for 2 minutes. Next, add the red pepper, sugar snap peas and chilli and cook for a further 5 minutes, stirring occasionally until the tofu is golden.
Add the noodles and spinach and cook for a further 2 minutes
Turn off the heat and stir in the satay sauce, then serve.

- 175g silken tofu, diced
- 2 tbsp satay sauce
- 1 tbsp soy sauce
- ½ chilli, chopped and deseeded
- 30g sugar snap peas
- ½ red pepper, sliced
- 30g spinach, washed
- ½ bag soft noodles
- 1 tbsp vegetable oil
