Vegan Courgette Stir Fry

How to Make It

  • Add the olive oil to a medium heat pan and add the pepper and sugar snap peas, cooking for 2-3 minutes.
  • Pour the mushrooms into the pan and cook for a further 7-8 minutes, stirring throughout.
  • Next, add the courgettes, garlic, ginger, and soy sauce. Combine and cook for 2-3 minutes, then serve.
  • Ingredients

    • 2 courgettes, julienne peeled
    • 1 red pepper, sliced
    • 100g sugar snap peas
    • 100g mushrooms, sliced
    • 1 garlic clove, minced
    • 3 tbsp low salt soy sauce
    • ½ tsp ginger, peeled and finely chopped
    • Salt & pepper to taste
    • 1 tbsp olive oil
